Crispy Baked Chicken Recipe
Looking for a quick an easy go-to recipe that is great for company, potluck, Sunday dinner, or just an easy family meal? If you mix a batch of this seasoning mix and keep it on hand then you will have a dinner thrown together within minutes. This Crispy Baked Chicken recipe was shared from a friend and is a family favorite. I keep the seasoning on hand. It also goes great on potatoes, sheet pan meals, or a season salt replacement. This stores great in those empty glass spice jars you hate throwing away.
This recipe is best with skin on, bone-in thighs and/or legs. It is perfect if you enjoy crispy skin. If not, it still makes for tender juicy chicken, even if you must pull the skin off.
Seasoning Recipe
Ingredients:
8 Tablespoons Salt
4 Tablespoons Paprika
1 1/2 Teaspoons Cayenne Pepper
2 Tablespoons Thyme
2 Tablespoons Onion Powder
1 Tablespoon Garlic Powder
1 Tablespoon Black Pepper
Instructions:
Combine and store in an airtight container until ready to use. (Chicken recipe below).
Instructions for Making Crispy Baked Chicken
Ingredients:
1-2 Onions
Chicken Thighs (with skin-on, bone-in) (just use however many you need to feed your family, you will have plenty of seasoning)
Seasoning (recipe above)
Instructions:
Preheat oven to 350F. Slice onions and place in the bottom of baking dish. Wash chicken and pat dry with a paper towel. Sprinkle seasoning generously on the top and bottom of pieces. Place chicken on top of onions. Bake chicken 40-50 minutes or until cooked through and skin is crispy. Be sure to check doneness with a meat thermometer. Chicken should be 165F when cooked through. Let chicken rest 5 minutes before serving with your favorite sides.
